Our Italian Wedding soup is amazing! After opening soup bag, set aside focaccia croutons.
If you’re in a rush, just bring 8 cups of water to a boil, and add the contents of this tube!
Stir frequently for 20 minutes. Add store bought meat balls and focaccia croutons. Add salt & pepper to taste.
If you have time, add croutons to 1.5 cups hamburger in a large mixing bowl. Hamburger can be beef, pork, chicken, turkey or wild bison, elk or moose meat. Add 1 egg. Mush all together and make small meat balls and fry in sauce pan, brown until crispy. Bring 9 cups to a boil, add contents of bag, stir frequently until orzo is ready (20min) then add in your pre-made meat balls.
ITALIAN WEDDING SOUP in the INSTANT POT
Prep time: 20 minutes Instant pot time: 12 minutes
1) Pour the tube of soup mix into the inner pot. Reserve breadcrumbs for soup garnish. Add store bought meat balls OR make tiny meatballs with 1.5 cups fresh hamburger, 1 egg, and included breadcrumbs, roll into tiny meatballs and cooked. Or sausage if desired.
2) Add 8 cups of boiling water (or fill to the 2/3 max line, add the rest of the water at the end). Stir.
3) Press “Sauté”, stirring soup till it starts to bubble.
4) Press “Cancel”, put the lid on, close steam vent.
5) Press “Soup”, select 12 minutes.
Use natural release or quick release.
Add reserved breadcrumbs to each bowl upon serving.
