Summer Carrot Ginger
In a medium sauce pan fry 1 diced onion, clove of garlic and carrots in butter! You can add medium or spicy sausage / bacon to your sauce pan.
Bring 8 cups of water to a boil, add 2 lbs shredded carrots & this bag and your tenderly cooked veggies and sausage now and simmer for 30 minutes or less.
Cut an orange in half and squeeze into your soup bowl or add cup orange juice or add a can of coconut mik/cream! We always try and source fresh salsa from the market, this time we added Karen's Salsa!
Enjoy with crusty bread!
