Canadian Prairie Chicken Rice
Whether it’s grilled, sautéed, baked, or roasted, this is your guide to the ultimate weeknight wonder: Chicken Soup!
Remember: Add Soup Base to Taste!
After you’ve decided on the method, dice up 2-3 good size cooked chicken breasts and place them in a large pot. You can add a couple coarsely chopped celery stalks, 1 minced garlic clove, diced onion and a beer or white wine! Cook until the onion is translucent and vegetables are tender, about 5 minutes.
Bring 8 cups of cold water to a boil, add this bag of specialty spices and ingredients; add your cooked chicken & veggies. Bring to boil; reduce heat, cover and simmer, stirring occasionally for 30 minutes. Add a 1/2 can of diced tomatoes, a cup of cream and a touch of oyster sauce for boldness. If you like, add snow peas for a different texture.
When ready, discard bay leaves. Add salt and ground pepper to taste.

PRAIRIE CHICKEN RICE SOUP in the INSTANT POT
Prep time: 15 minutes Instant Pot time: 12 minutes
1) Pour the tube of soup mix into the inner pot. Add optional items of choice (chicken/turkey,
celery, tomatoes (fresh, stewed, canned,). Mix well.
2) Add 8 cups boiling water (or fill to max 2/3 line, add remaining water after cooking). Stir well.
3) Press “Sauté”, stirring the soup until it starts to bubble.
4) Press “Cancel”, put the lid on, steam vent closed.
5) Press “Soup”, select 12 minutes.
Use natural release or quick release. Add cream/oyster sauce if desired. Stir well. Add water if the soup is too thick. Enjoy! Enjoy! Enjoy!
