Simply bring 8 cups of water to a boil. Toss the contents of the bag into boiling water. Stir frequently, to keep noodles from sticking. Keep on a rolling simmer for 20 minutes or until noodles are tender to eat.
We like to add cooked chicken breasts cut up into cubes. Add whatever chicken you like! Or seafood for that matter.
Add a can of Thai Coconut Milk to the soup. If you like it not so hot and spicy add 2 cans of coconut milk. Squeeze 1/2 a fresh cut lime - into your soup.
Ladle soup into bowls, with shrimp, fresh cilantro and coriander leaves or lemon grass sprigs. Add lime wedges to the side of each bowl!Season with salt and pepper to taste.

WICKED CHICKEN THAI NOODLE SOUP in the INSTANT POT
Prep time:15 minutes Instant pot time: 6 minutes.
1) Pour the tube of soup mix into the inner pot. Add optional items of choice (coconut milk,
prepared diced chicken, etc.). Stir.
2) Add 8 cups of boiling water (or fill to the max 2/3 line – add the rest of the water after cooking). Stir together well.
3) Press “Sauté”, stirring soup until it starts to bubble.
4) Press “Cancel”, close the lid, steam vent closed.
5) Press “Soup”, select 6 minutes.
Use natural release or quick release. Add prepared sea food now, stir in peanut butter if desired. Use “Sauté” to bring soup to bubble if desired. Add water if soup is too thick. Add garnish for an amazing presentation and taste!!
